True story - My in-laws came over for dinner the other night and I had no idea what to make. I could just boil some pasta and warm some canned sauce but I wanted to make something a bit fresher and so the SMP version of a fish taco was born.
Gorton's Beer Battered Tenders
Shredded Lettuce
Can of petite diced tomatoes with jalapeno or chipotle pepper in it
Favorite fine shredded cheese - we like the store brand quesadilla blend
Small soft tortillas - we like flour tortillas
Sliced lime
Secret Sauce :
2 parts mayo
2 parts plain yogurt
1 part Hidden Valley Chiptole Sandwich Spread
I know what your thinking, yogurt and mayo ?? weird and random right ? But try it !! Simply mix the 3 ingredients in a plastic container ( easy seal for any left over sauce) while the fish is cooking.
**Also I tried this with the regular fish tenders but these taste soooo much better with the beer batter version **
Once the fish is fully cooked ( about 20 or so minutes - remember to flip them half way to give them that even crispy crunch ) start assembling your fish taco.
I personally like to start with the secret sauce first. This acts as a glue for the shredded cheese, shredded lettuce and diced tomatoes. I think this looks good - I'll have to try making fish tacos for my family. (Even better, make them with shrimp!)

ReplyDeleteI love fish tacos. I used to make them with tilapia from scratch. But I'm a vegetarian now.
