What are you guys cooking today ?
I thought I would be a bit adventurous with the chicken today and give this spin a try.
Have you made bourbon chicken before ??
-Bourbon Chicken: http://www.bigoven.com/recipe/201809/bourbon-chicken2 pounds boneless chicken breasts; cut into bite-size pieces
1 tablespoon olive oil; (1-2)
1 garlic clove; crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch; (if thick sauce desired)

- 2 zucchini – cut off the ends, cut into 4ths – length wise – You should have 8 total
- 1 tablespoon olive oil
- salt
- garlic powder
- black pepper
- 1⁄3 cup parmesan cheese

So I made my version of these tonight and they were amazing !! To be a bit more kid friendly I did cut down the zucchini into bite sized pieces and baked them in the toaster oven which was my first mistake because they never crisped just kind of got a little gooie but hey they still tasted amazing and the kids ate them !!
I also hadn't realized that we were out of apple juice but I don't think it is needed especially since I did use apple cider vinegar. I didn't add any extra water either, it simmered up perfectly !

Looks good! I had tons of potatoes and squash to cook for the week, so not that exciting (but nutritious!)
