Grilled Salmon Salad : Delicious, Healthy and #RealFabulous - Perfect for Lunch or Dinner !


Today I am sharing with you my new favorite go to quickie meal that is both super delicious and healthy - the Grilled Salmon Salad. I did receive free product coupons for the Gorton's Seafood products mentioned in this post. However, I loved them so much I am sharing my experience and meal idea with you :-)

Before I started my healthier living adventure in November, I enjoyed preparing salmon and other fish filet meals for Mike and the kids. We usually pan sear tilapia or salmon steaks aside asparagus or broccoli and some whole grain brown rice. However, on this particular day, I felt like having something a bit different. And I am totally glad I did or I may not have stumbled upon this fantastical meal !


See I had just come home from the gym and was starvinggggg. I wanted something light but still fulfilling and thought hey, why not a protein packed salad? And so the Grilled Salmon salad was born. OK obviously this is not terribly original but it was new to me. I had never had or made a fish salad before. I have done taco's before yea, but not a salad.

This actually isn't so much a recipe but rather a yummy meal idea. That's how easy it is to prepare !
I started out with two unwrapped frozen Gorton's Grilled Salmon filets and placed them spritzed with veggie oil on a foil lined toaster oven tray that was . Put it in the toaster oven on bake and 15 minutes later I was showered feeling so fresh and so clean and the salmon was all cooked.
While the filets cooled down to an edible temperature I grabbed some bagged Italian Style romaine lettuce.  This kind already had some carrots and cabbage already in it. Which is awesome = Bonus veggies. Drizzled a smidge of oil and vinegar dressing over top. After that I added a pinch of thinly grated Italian cheese and placed the delectably flaky salmon on the plate. Let me tell you, I was totally drooling !!

Actually then second plate of salad and salmon was for my 2 year old too who gobbled it right up. She told me the salads was fancy :-) and she is right. You really can't go wrong with a plate that looks like this! At only 100 calories a filet the Salmon is a perfect addition to any salad -- ouhhh think crumbled up feta mmmm or black olives and grape tomatoes. I am totally obsessed with this meal right now !!

  4. I'm a sucker for Gordons Grilled Salmon! I'm not a huge fan of seafood, basically only like some fish, but this looks really good in a salad, too!

  5. I'm all for healthy eating but I personally hate fish. But this does look like a good healthy option, maybe I will try the recipe out for my husband.. he's always the guinea pig in my house lol... and if he likes it I'll give it a shot! Thanks for the idea :)
