A SMP Original Recipe - Chocolate Chip, Cinnamon & Blueberry Muffins

How mouth watering do these look, right ? 
I will admit, I am pretty impressed with how fantastic they turned out.
While not super innovative or creative I am proud of my little find with this mash up 
- plus it's easy and the kids love it ! SCORE!

What you are going to need : 
  • 2 Packets of your fav muffin mix. We like to use one chocolate chip and one whole grain blueberry or banana packet.
  • About 3 table spoons of brown sugar - we prefer light brown sugar
  • Some cinnamon
  • Mini chocolate chips
  • 2 shallow muffin top or doughnut baking pans

Since the original recipe on the packet is for normal muffin pans ( which obviously you could totally make this topping on normal muffins) I cook my muffin tops and baked doughnuts for about 6-7 minutes. I really like that the only ingredient the Marths White packet's need is 1/2 cup of milk per packet ! No eggs to crack or oil to measure out.

Basically the trick to it is the make the muffin mixes - both chocolate chip and whatever other flavor you choose (again we used blueberry and chocolate chip here) in the same bowl. Then use a 1/4 cup measure to scoop them into the lightly greased pans. Next melt a smidge of butter ( maybe 1-2 tablespoons)with about 3 tablespoons of brown sugar and a decent amount of cinnamon in a small plastic container in the nucker. After the butter is melted the mixture should be crumbly not runny. If it is too runny add some more brown sugar. Lastly sprinkle the cinnamon sugar mixer over the muffins using your fingers, then top them off with some mini chocolate chips and bam ready to go in to oven. 

Like I said early nothing fancy about the recipe or method but I think they taste 100% better and a bit more "homemade" feel about them. You can even sweeten up some bran muffins or other healthier options of the like with this topping and maybe our kids might actually eat them ?!? Worth a try right ?
